What You Will Need:

  • 2 Bread Loaf tin 20cm / 1 x 30cm x 30cm pan.
  • Scale
  • Wooden Spoon
  • Knife
  • Oven
  • Bowl of Water for Hands

Method 

  • Preheat the Oven: Preheat your oven to 180°C (350°F).
  • Prepare the Baking Tins: Grease the bread loaf tins or line them with parchment paper to prevent sticking.
  • Combine Dry Ingredients: In a large mixing bowl, combine the Gracious Bakers Bread Flour, sweetener of choice, Gracious Bakers Superflax, gluten-free oats, baking powder, bicarbonate of soda, and salt. Mix well to ensure all the dry ingredients are evenly distributed.
  • Mix Wet Ingredients: In a separate bowl, mix the water, lemon juice, and coconut cream. Stir until well combined.
  • Combine Mixtures: Gradually pour the wet mixture into the dry ingredients while stirring with a hand beater until a smooth batter forms.
  • Add Seeds and Optional Ingredients: Gently fold in the pumpkin seeds, sunflower seeds, chia seeds, and chopped dates (if using) until evenly distributed throughout the batter.
  • Pour into Tins: Divide the batter evenly between the prepared loaf tins or pour it into the 30 cm x 30 cm pan. Sprinkle your rusk with a bit of water and use water to smoothen the top if you prefer.
  • Bake: Place the tins in the preheated oven and bake for about 45-50 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  • Cool and Slice: Remove the rusks from the oven and let them cool in the tins for about 10-15 minutes. Once cool enough to handle, turn them out onto a wire rack to cool completely.
  • Slice and Second Bake: Once cooled, slice the loaf into your desired thickness. Place the slices back onto baking sheets and return them to the oven at a lower temperature (about 160°C/320°F) for another 15-20 minutes until they are crispy and golden. Flip halfway through baking to ensure even crisping.
  • Cool Completely: Remove the rusks from the oven and allow them to cool completely on the wire rack.
  • Enjoy: Your delicious and high-fiber Gracious Bakers Breakfast Rusks are now ready to enjoy! Perfect for dipping in your favorite beverage or enjoying on their own.

  • Please be mindful of your sugar intake and restrict to 10% of your daily total energy intake.
